Tasting: A trademark of Sherry and Sherry style wines is the method of 'Fractional Blending' using the Solera system, new wine is gradually blended with more mature wine to result in a consistent style, year on year, these wines are obviously non-vintage. There are wines produced without the use of fractional blending however, single vintages matured on their own, generally, although unmistakably sweet and unctuous, they produce lighter styles. Sumptuous and rich, toffee, Christmas cake, raisins all combine with surprisingly fresh acidity.
