Tasting: Rufete, a variety that the up-and-coming Sierra de Salamanca region has taken as it’s great hope, and very well it is doing with it indeed. Light bodied with deliciously plush texture, red forest berries, notes of truffle and undergrowth, with herbs and balsamic.
