Tasting: The wines of Pérez Barquero are not technically Sherry due to not being made in D.O. Jerez, they are ‘Sherry-style’ wines, and being made from the grape Pedro Ximénez offer a different and very interesting take on the style to the wines of Jerez. Un-fortified due to natural alcohol being high enough to not require it, dry and light, slightly bitter and pleasantly crisp, with its delightful hints of wood and dried fruit and grilled nuts.
